Sweet Tea Brine

With the addition of citrus and spices this is a great brine for turkey and wild pig.

Ingredients:

  • Water 1 Gallon
  • Kosher Salt 1C
  • Sugar 1C
  • Black Tea Bags -4
  • Garlic clove (cut in half)
  • Onion cut in quarters
  • Orange cut in quarters
  • Bay leaves 2
  • Rosemary Sprigs
  • Thyme Sprigs
  • Black peppercorns 8 to 10

Method:

  • Bring Water to slow simmer
  • Add all ingredients and let simmer for 10 min
  • Remove from heat and allow to cool to room temperature
  • Add meat and make sure it is completely submerged
  • Brine for 12 to 24 hours
