With the addition of citrus and spices this is a great brine for turkey and wild pig.
Ingredients:
- Water 1 Gallon
- Kosher Salt 1C
- Sugar 1C
- Black Tea Bags -4
- Garlic clove (cut in half)
- Onion cut in quarters
- Orange cut in quarters
- Bay leaves 2
- Rosemary Sprigs
- Thyme Sprigs
- Black peppercorns 8 to 10
Method:
- Bring Water to slow simmer
- Add all ingredients and let simmer for 10 min
- Remove from heat and allow to cool to room temperature
- Add meat and make sure it is completely submerged
- Brine for 12 to 24 hours
