His and Hers Moose Burgers (Hers) Mushroom & Swiss

It’s not everyday we get to have moose meat. Unlike, deer or even elk, in most cases going on a moose hunt isn’t just a short drive to our favorite hunting spot. (Unless you live in Alaska or BC)

So when we have the opportunity to prepare moose meat, we do our best to take full advantage of it. This moose was from our 2019 trip to BC with our friends from BOG. Team OS was not lucky enough to take a moose but James T. (Director of Product Development for BOG) was kind enough to share.

We actually ground this batch right before cooking and added a 20 percent ratio of bacon to add some fat content. The final product turned out amazing.

We prepared a Bacon Mushroom and Onion, Swiss burger for Deborah and a Bacon BBQ Chipotle burger for myself.

We use RecTec pellet smokers/grills for all of our outdoor cooking and all of our wild game is processed using Made With Meat equipment.

For The Toppings

Ingredients:

  • Fresh Kaiser Rolls
  • 2 Slices of Bacon
  • Swiss Cheese
  • 1/2C Sliced Portabella Mushrooms
  • 1/2C Sliced Yellow Onion
  • Salt
  • 1/4Tsp Onion Powder
  • 1/2 Clove Garlic
  • 2T Worcestershire Sauce
  • Mayo
  • Lettuce

For the burgers:

Ingredients:

  • 1 pound of ground venison (We used moose and ground with bacon at a 80/20 ratio)
  • Chopped Red Onion 1/2 Cup
  • Garlic 1 clove
  • Favorite spice blend (We used RecTec Freakin Greek)
  • Sauce for moisture, you can use ketchup, A1, Heinz 57 or any of your favorites. We used 3 T of Heinz 57

Method:

For The Toppings:

  • Cook the bacon
  • Leave enough grease to cover bottom of pan
  • Slice mushrooms and onions
  • Add to hot bacon grease
  • Add garlic, onion powder, salt and Worcestershire sauce (adjust taste as needed
  • Cook until onions are translucent and mushrooms are soft
  • Set aside

Make the burgers:

  • Mix venison and all ingredients together
  • Shape mixture into 3 to 4 patties (slightly larger than the Kaiser rolls)
  • Season your grill grates with a high temp oil
  • Heat your grill on high
  • Cook burgers from rare to medium rare (do not over cook)
  • Add cheese of your choice to melt while on grill for the last minute (we used Swiss. )
  • Add butter to the Kaiser rolls and place on grill to toast

Construct Burgers:

  • We put mayo on bottom bun and add leaf lettuce (Helps keep bottom bun from getting soggy from burger)
  • Add burger
  • Top with bacon first, then mushroom, onion mixture
  • Add any of your favorite toppings. ( My wife, Deborah loves tomatoes, me, not so much so we added some more traditional toppings to hers.
