Seared Halibut With Mango Salsa

You may not know this but we love to fish, especially halibut in Alaska. It seems most of our time is spent in the field hunting but we do wet a line on occasion and the reward is well worth it. Deborah found a couple of halibut steaks in the freezer we had forgotten about and suggested we cook them up, it took me about 2 seconds to grab the cast iron skillet.

No Chef help on this one, we found a couple of recipes on line that we liked and combined them for what we believe is an outstanding meal and it was very easy to prepare as well. If there is not a video below yet, there will be soon.

Ingredients:

Mango Salsa

  • Mango Chopped
  • 1 Jalapeño finely chopped
  • 1/2 red onion finely chopped
  • 1/2 red bell pepper chopped
  • 1 Garlic Clove
  • 4 Tablespoons Lime Juice
  • Salt to taste

Halibut

  • 2 Halibut Steaks
  • 2 Tablespoon Lime Juice
  • 1 Tablespoon Olive Oil
  • 1teaspoon of favorite spice mix (We used a blackened seasoning blend)
  • Salt and Pepper to taste

Method:

  • For the salsa mix all the chopped ingredients together and pour lime juice over the top. Set aside.
  • For the halibut mix all the ingredients together (except the halibut) add additional seasoning to your halibut if desired
  • Brush halibut with the mixture and set aside to use during the cooking process.

Cooking:

There are multiple options here, including on the grill or a cast iron skillet. Whichever method you choose, do NOT overcook your halibut, you will be disappointed. Our steaks were pretty thick, so we cooked the first side over medium heat for about 4 minutes and then flipped over to the other side for about 3 minutes.  We cooked ours in a cast-iron skillet and added more olive oil to the pan to help prevent sticking. To prevent halibut from tearing apart, slightly nudge the steak with your spatula to make sure it is not sticking to the pan.

Plate and top with mango salsa, and serve with your favorite side dishes. We chose risotto for ours.
