Ingredients:

  • 1 g water
  • 5 oz soy sauce
  • ¼ c kosher salt
  • ¼ c sugar
  • 1 T sage
  • 1 T celery seed 2 tsp thyme

Method:

  • Combine salt, sugar, and spices, add to 1 qt of water, heat and let steep and chill for 1 hour, strain, add to remaining water and soy sauce.
  • Chill this brine, inject and use as brine for wild boar.
