Ingredients:
- 1 g water
- 5 oz soy sauce
- ¼ c kosher salt
- ¼ c sugar
- 1 T sage
- 1 T celery seed 2 tsp thyme
Method:
- Combine salt, sugar, and spices, add to 1 qt of water, heat and let steep and chill for 1 hour, strain, add to remaining water and soy sauce.
- Chill this brine, inject and use as brine for wild boar.
